Vegetable Upma
Ingredients
1. Fried rava (Semolina) -1cup
2. Carrot –100 gms
3. Beans -100 gms
4. Potato -1 big
5. Onion -2
6. Green Chilly -4
7. Ginger –1 small piece
8. Curry leaves - a few
9. Cashew nuts -8
10. Kismiss-10
11. Coriander leaves 3-4
strands
12. Boiling water-2 cups
13. Ghee or Oil - ¼
cup .
14. Red chilly -2
15. Mustard seeds -1tsp
16. Bengal gram
(kadalaparippu) -1tbsp
17. Black gram (uzhunnu
parippu) -1tbsp
18. Asafoiteda -a pinch
19. Lemon juice -2 tsp
Method
Cook the chopped vegetables by steaming for about 10 mts and
keep aside. Heat oil in a pan, add mustard seeds, Red chilly, Bengal gram,
Black gram, when they turn brown, add Asafoetida, chopped green chilly, ginger,
curry leaves and fry well. Then add chopped onion, when it become transparent,
add fried rava and stir well for a few mts. To it add cooked vegetables, salt,
boiling water and stir continuously for 5 mts. Cover the lid and turn off the
fire after few mints. Sprinkle lemon juice to get better taste. Vegetable Upma
is ready. Garnish with fried cashew nuts, kismiss and coriander leaves. Serve
hot with Chutney.
