Aval Upma (Poha)
Ingredients
1. Aval –2 cups
2. Onion -1
3. Green chilly -2
4. Ginger -1 small pieces
5. Tomato -1 big
6. Potato –1( finely chopped)
7. Grated coconut - 1 cup
8. Lemon juice - 2 tbsp
9. Salt
10. Sugar -1 tbsp
For seasoning
1. Dry red chilly –2
2. Urad dal -2 tsp
3. Mustard seeds -2 tsp
4. Oil – 2 tbsp
Method
Sprinkle little water in aval to make it soft and keep aside. Heat oil in a pan, add seasoning items, sauté well, add chopped items 2-4 and fry till it becomes soft. Add salt, boiled potato pieces and sauté well .Then add the soft aval, grated coconut, chopped tomatoes to it along with lemon juice and sugar. Mix well and remove from stove.
