Carrot Curd Rice


Ingredients

1.Rice-1cup(Basmathi rice)
2.Carrot grated-1 cup
3. Fresh curd-1 cup
4.Water-2cup

For Seasoning

1..Green chilly-2 finely chopped
2.Ginger-1 tsp
3.Asafoetida-a pinch
4.Red chilly-2
5.Mustard seeds-1tsp
6. Urad.dal-1tsp
7. Curry leaves-a few
8.Gingelly oil-2 tbsp

Method

Cook the rice and grated carrot with 2 cup of water in a pressure cooker upto 3 whistles and turn off the flame after 3mints.  Allow  the pressure cooker to cool gradually,  open and keep it aside. 

Heat oil in a pan  fry the items for `seasoning’ and allow to cool. 

Mix the rice/carrot with curd, stir well and add the fried items and mix well. Serve with pickle.
