Appam with Vegetable stew
Ingredients (appam)
- Raw rice-2 cups
- Coconut grated-1 cup
- Yeast – 1 tsp
- Sugar – 3 tbsp
- Coconut Water –1 cup
- Soda bicarbonate-1/2 tsp
- Salt-to taste
- Water – 1 cup
- Luke warm water – ½ cup
Method
Dissolve the yeast and 1 tsp sugar in luke warm water to ferment for ½ hr. Clean and wash the rice and soak in water for 3 hr. Drain out the water and grind the rice along with coconut water. After few mins of grinding, take ¼ cup of batter and add 1 cup water in it and keep aside. Add grated coconut into the remaining rice batter grind again into a fine paste. Heat a sauce pan and add the ¼ cup batter mixed with 1cup of water (taken from the batter before adding the coconut) and boil by stirring continuously in low flame. When the mixture changes to a thick paste, turn off the flame and allow it to cool . Add the thick paste into the smooth batter and add the fermented yeast mix . The batter should not be too watery because after fermentation it will rise and become thinner in consistency. Leave the batter over night and allow it to ferment.
Before preparing the appam add ½ tsp soda powder,salt and sugar and keep for 1 hr. The batter should have the consistency of dosa batter .Heat a nonstick appam tawa and pour a ladleful of batter and rotate the tawa to get round shape.Do not spread the batter with the ladle. Cover with a lid , allow it to cook on medium heat for around 2-3 min .Appam is ready to serve with vegetables stew or Chicken curry or Egg roast..

7.Green peas-1/2 cup
8.Capsicum-1 small

10.Coriander leaves-1/4 cup
11.Coconut milk-2-3 cup
12.Cardamom-3 crushed
13.Ghee or coconut oil-4 tbsp
14. salt
Method
Wash and clean the vegetables 1-6and cut into small piece cook the cut vegetables along with green peas in a cooker adding salt. Add coconut milk in to the cooked vegetables and boil in slow flamefor few min.finally add ghee and crushed cardamom
And chopped coriander leaves.
