Mixed vegetable Soup
INGREDIENTS
1.Beans-100gm
2.Carrot-100gm
3.Beet root-100gm
4.Tomato-100gm
5.Onion-100gm
6.Ginger-1tsp(finenly crushed)
7.Cooked Oats-1cup
8.Celery-1tbsp chopped (or Coriander leaves)
9.Salt to taste
10.Water – 5 cups
11.Butter -2 tsp (optional)
12. Pepper powder-2 tsp or according to your taste.
METHOD
Clean and cut all the vegetables into small pieces.
Put all ingredients except butter in a cooker with water and keep in maximum heat. After 3 whistles, reduce the flame to medium heat and cook for 5 mts. Allow the cooker to cool gradually.Then drain out the stock from the cooked vegetables through a sieve and keep aside.
Mash the cooked vegetables in a mixie and mix it with the stock. Add cooked Oats, salt , pepper powder, celery and reheat the soup. Add butter and serve hot.
