Mutton Chilly Fry
Ingredients
1.Mutton Pieces-500gms
2.Small onion-500gms(finely chopped)
3.Coconut-1/2(cut into smallpieces)
4.Garlic -1/2tbsp(crushed)
5.Fennel seeds or perumjeerakam)-2 tbsp
6.Ginger- 1inch piece(crushed)
7.Garlic-10 flakes(crushed)
8.Turmeric pdr-1tbsp
9.Chilly pdr-3tbsp(kashmiri chilly)
10.Coriander pdr-1tbsp
11.Pepper pdr-2 tbsp
12.Garam masala pdr-1 tbsp
13.Vinegar-1/4 cup.
14.Salt –to taste
15.Curry leaves-a bunch

Method
Heat a pan and slightly roast the powders (Items 8,9,10,11,12) in slow fire for a few mints. Wash and clean the mutton pieces and marinate with with roasted powders and items 6,7,13,14 along with few curry leaves and keep it for 1/2 an hour. Cook the marinated mutton well without adding water. Heat oil in a pan, add perum jeerakam, when it start spluttering, add garlic, sauté till it become light brown in colour.Then add chopped small onions, fry well, when it turns slight brown, add the cooked mutton and keep on stirring till it is fried very well without gravy. Decorate the fried mutton with fried coconut pieces and curry leaves. Serve hot with brown rice.
