YELLOW GHEE RICE

Ingredients

Basmati rice -2cups, Water - 4cups, Onion -1big, Green chilly -4, Ginger-garlic paste- 1½ tbsp, Turmeric powder-1tsp, Red chilly (Kashmiri chilly) powder-1tbsp, Coriander powder-1tbsp, Coriander leaves – ½ cup, Ghee – ¼ cup, Salt as needed, Lemon – ½

Method
     
1.      Wash the rice and soak for 20mins and keep aside.
2.      Crush chopped onion, green chilly and ginger garlic paste and coriander leaves together into a coarse paste.
3.      Heat ghee in a deep vessel; add the crushed masala, sauté well until aromatic.
4.      Add the powders, salt and little water so that the powders will not burn and sauté for few mins.
5.      Add the soaked rice and fry on medium flame for 2-3 mins.
6.      Then add required water (check the salt) and lemon juice.
7.      Cover and cook till the rice is done (all the water is evaporated).
8.      Sprinkle ghee over the cooked rice and serve hot with curd and pickle.
