MANGO COCONUT RICE
Ingredients
Raw mango -1(peeled and grated), Cooked basmati rice -1cup,
Shredded coconut -1cup, Onion -1 chopped, Green chilly -4 (slit & finely
chopped), Ginger chopped- 1tbsp , Salt, Turmeric powder -1tsp
For seasoning
Mustard seeds - 1tbsp, Dry red chilly -2, Urad dal -1tsp, Channa
dal -2tbsp, Peanut t- ¼ cup, Curry
leaves – a few, Asafoetida - a pinch, Fenugreek – ¼ tsp, Sesame oil or any
other oil - 2tsp.
Method
1.
Spread the cooked rice in a plate and set aside.
2. Heat oil, add mustard, fenugreek and red chilly, and
let it splutter and add dal and peanuts and roast till the dal turns light
brown.
3. Add the chopped onion, green chilly, ginger, curry
leaves, turmeric powder and asafoetida and sauté.
4. Next add grated mango and stir, then add shredded
coconut, fry for 2-3mts, add salt, again stir well and turn off the flame.
5.
Add the cooked rice and mix gently.
6.
Serve with pickle and potato fry.
