CHICKEN FRY
Ingredients
1. Chicken legs -4
2. Ginger -small
piece
3. Garlic -8-10
4. Small onion -
4 or ½ big onion
5. Kashmiri
chilly dry -15 soaked in warm water for a few mins
6. Fennel powder
-1tbsp
7. Black pepper
-1tbsp
8. Curry leaves
a few
9. Tamarind pulp
-1tbsp
10. Turmeric
powder
11. Salt
12. Oil for
shallow frying – ¼ cup
Method
1. Grind the
soaked chilly, ginger, garlic, fennel, turmeric, curry leaves, pepper, salt and
tamarind to fine paste.
2. Wash and
clean the chicken legs, drain the water completely, make small slits on the
chicken, then marinate with the ground paste and keep aside for1hr.
3. Heat oil in a
pan well before frying, (do not fry chicken in low fire as this will make the
coating soggy and oily) fry either shallow or deep till the chicken pieces become
crispy outside and soft inside.
4. Serve hot
squeezing lime juice and decorate with sliced onions.
