PINEAPPLE PULISSERI
Ingredients
Pineapple chopped -2cups, Shredded coconut -1cup, Jeera-1tsp,
Green chilly - 4 chopped, Turmeric powder- ¼ tsp, Red hilly powder-1tsp, Salt,
Water as needed, Jaggery – ¼ cup, Thick curd -1big bowl, Oil - 1tbsp.
For seasoning
Mustard-1tsp,
Fenugreek – ½ tsp, Red chilly -2broken, Curry leaves - a few.
Method
1.
Grind the coconut, jeera, turmeric and green chilly into
fine paste.
2.
Cook the pineapple along with red chilly, turmeric,
salt and 2cups of water.
3.
Add jaggery to the cooked pineapple and boil for 5mns.
4.
Add curd, enough salt to the cooked pineapple (add
jaggery if needed) stir well and cook for 2-3mins in low flame without
bringing to boil.
5. Heat oil and add mustard, fenugreek, red chilly and
curry leaves, let it splutter, add this to the pineapple pulisseri.
6.
Serve hot with rice.
