BRINJAL RASAM




Ingredients

1.      Brinjal -1 small
2.      Tomato -1
3.      Tamarind  -lemon sized
4.      Garlic-5-6
5.      Small onion/chuvannully -6,
6.      Curry leaves -a handful
7.      Asafoetida - a pinch,
8.      Rasam powder-1tbsp
9.      Pepper powder -1tsp
10.  Red chilly powder-1tsp,
11.  Green chilly - 4 (slit)
12.  Dry red chilly -2 (broken into 2pieces)
13.  Mustard seeds - 2tsp
14.  Salt as needed
15.  Oil -2tsp

16.  Jaggery -one tbsp(optional)

Method


1.      Heat oil in a pan and shallow fry the chopped brinjal and tomatoes and keep aside for cooling.

2.      Soak the tamarind in warm water for 15 mns.

3.      Strain the tamarind pulp and add the shallow fried brinjal and tomatoes crush with hands gently

4.      Add 3 cups of water into it and keep in stove for boiling in medium heat, add salt and turmeric powder.

5.      Heat oil and add red chilly, mustard and curry leaves, sauté, then add finely chopped small onion and garlic, sauté well.

6.      Then add rasam powder, pepper powder, red chilly powder and asafoetida, sauté and add this to the boiling tamarind mix, check salt.

7.      Add jaggery and serve hot with rice.
