MAMBAZHAM VARUTHARACHATHU





Ingredients

1.      Mango (ripe) - 2
2.      Cinnamon -1small piece
3.      Cloves - 4
4.      Shredded coconut -2cups
5.    Urad dal  - 1tsp
5.      Green chilly - 5
6.      Dry red chilly -10
7.      Turmeric powder -1tsp
8.      Curd – ¼ cup/2tbsp
9.      Jaggery - 2-3 tbsp (according to your taste)
10.  Water -2cups

For Seasoning

1.      Mustard -2tsp
2.      Jeera -1tsp
3.      Fenugreek - 1tsp
4.      Small onion - chopped ½  cup
5.      Curry leaves a few
6.      Dry red chilly -2broken
7.      Oil -2 tbsp

Method

1.   Heat a pan dry roast shredded coconut,urad dal  and red chilly till golden brown and grind to a very smooth paste.

2.    Take 2 cups of water in a deep vessel, add chopped mango, cinnamon, cloves, slit green chilly, turmeric powder and salt, cook until mango become soft.

3.     Add curd to the above and cook in low flame for 2-3 mins.

4.    Then add ground coconut paste, bring to boil in low flame, add jaggery, turn off the stove after 2 mns and add the seasoning.

5.   Heat oil in a pan, add mustard seeds, jeera, fenugreek, red chilly and curry leaves, allow it to fry and add chopped small onion, sauté well till light brown.

6.    Add this to the mambazha curry, check salt and jaggery once again and enjoy with rice.
