COCONUT COOKIES





Ingredients

1.      Maida (all purpose flour) - 2cups
2.      Sugar- ¾ cup
3.      Butter- ½ cup
4.      Egg -1
5.      Shredded coconut -1 ½  cup
6.      Baking powder-1tsp
  

Method
      
1.      Roast the shredded coconut in the oven by spreading the coconut as a thin layer on a baking tray in 180c for 5-10mins by stirring constantly until it turns golden brown. Then Remove from the oven and keep it for cooling.
2.      Sieve the maida along with baking powder.
3.      Beat butter and sugar well, then add egg, beat well ,add maida and mix gently
4.      Add the shredded coconut roast and mix.
5.    Make small balls with the dough and make any shape pressing the cookies down slightly since they won't spread much when baked. Cookies should be placed at about 3 inch distance.
6.      Preheat the oven in 180c for 15 mins.
7.      Bake in 180c for 10-15mins until cookies just begin to brown slightly.
8.      Don't over bake the cookies. Serve after cooling
