CHICKEN COCONUT MILK CURRY




Ingredients

1.      Chicken  pieces - 500gms
2.      Finely chopped Onion -2
3.      Green chilly - 5-6
4.      Ginger chopped - 1tbsp
5.      Garlic chopped -1tbsp
6.      Curry leaves –a few
7.      Cardamom -4
8.      Cinnamon - 1small piece   
9.      Cloves -4-6  
10.  Coconut milk -2cups
11.  Cashew nut- ¼ cup
12.  Oil-  as needed
13.  Turmeric powder- ½ tsp

Method

1.      Soak the cashew nuts in warm water for 15mins and grind to a smooth paste, keep aside.

2.      Heat oil in a pan, add cardamom, cinnamon and cloves, sauté, add chopped onion, sauté till onion become transparent, then add ginger, garlic and green chilly, sauté well, add some salt and turmeric powder.

3.      Add chicken pieces and ½ cup hot water and cook till it become soft and tender.

4.      Mix cashew paste with coconut milk and add to the chicken.

5.      Cook in medium heat for few more mins.


6.      Finally add curry leaves and turn off the flame.
