VEGETABLE STEW
Ingredients
Potato -4 peeled and
cubed, carrot -2 peeled and cubed, green peas- 1 cup, onion-1 big chopped, green
chilly -4 slit and cut into 2 pieces, ginger – 1 inch piece chopped, curry
leaves-2 stems, coconut milk pdr -7 tbsp/ 28 gm , cardamom-2 , cloves -6, cinnamon- 2
inch piece, fennel-1/2 tsp, Salt as needed, Ghee-2 tbsp, warm water- 2 cups.
Method
1.
Cook
the potato, carrot (you can also add beans, cauliflower etc) green chilly,
ginger, onion salt and curry leaves in a cooker upto 3 whistles and in low lame
upto 1 whistle. After cooling mash the vegetables gently, add the cooked green
peas and mix well.

Mix
the coconut milk pdr in warm water without any lumps.
3.
Powder
the cardamom, cinnamon cloves and fennel.
4.
Add
the coconut milk, masala powder, few more curry leaves and ghee in to the
cooked vegetables.
5.
Stir
well keeping in low flame for few mts and turn off the stove.
6.
Vegetable
stew is ready to serve with appam , idiyappam or roti.
