SPECIAL PINEAPPLE-GRAPES PACHADI
Ingredients
Pineapple chopped -250 gm /2 cups, Redgrapes-100gm
/1cup, Red chilly pdr-1 tbsp/15g, turmeric
pdr- ½ tsp/1.25g, Coconut milk- 1/3 cup/80g,
Jaggery -1/3cup, Salt.
For tempering:- Ghee-2 tbsp/15g, Mustardseeds-1
tsp/5g, Urad dal-1 tbsp/15g, Broken red
chilly -4 pieces, Grated coconut- ½ cup/50g, Curry leaves-2 stems
Method
1. In a pan cook the pineapple adding
chilly pdr, turmeric pdr and salt adding little water.
2. To the above, add the coconut milk
cook till the water evaporates, then add jaggery and mix well. Cook for some
time till it become thick.
3. Heat ghee in a frying pan,
splutter mustard, to this add red chilly, curry leaves and urad dal, sauté till
turn in to light brown. Then add the grated coconut and fry till golden brown.
4. Mix the tempering with pachadi
and mix well.
5 Finally add the grapes, stir gently, check salt and sweetness, cover the pan with a lid and keep for ½ hr
before serving.
6. Pachadi is ready to serve with
rice during sadhya.
