BROWN ONION PULAVU
Ingredients
Basmathi rice-2 cups /400gms, Water-4
cups, Onion-4 thinly sliced, Cloves-5, Cardamom-5, Cinnamon-2 small pieces, Shah
jeera/ black cumin seeds -1 ½ tsp, Coriander seeds -2 tsp/3gms, Salt as needed, Ghee - ¼ cup, Sugar -1tsp
Method
1. Soak rice in water for half an
hour.
2. Heat ghee in a vessel, add cinnamon,
cloves, cardamom, shah jeera, when brown
in colour add sliced onions and sugar till it turns brown in colour , finally add the coriander seeds and sauté well
3. Wash rice in water 2-3 times and
add it to the above masala and sauté for few mts.
4. Boil 4
cups of water and add to the sauted rice- masala, finally add salt ,some more ghee and cook till rice is
done.
5. Decorate
with fried onions and serve hot.
