AVAL/ POHA UPMA (FLATTENED RICE)
Ingredients
Aval or poha – 2 cups (120g) , Potato
-1, Small Onion -8-10, Tomato 1, Green peas- ½ cup (optional), Ginger-a small piece, Green chilly
-2, Curry leaves -2 stems, Turmeric pdr-1/2 tsp(1.5g) , Salt as needed, Sugar 1tsp
(4g)or as per your taste, Oil -2 tbsp (25g), Mustard-1 tsp (5g), Urad dal-1tsp
(5g), Roasted Chana dal or split chana dal -1 tsp (4g), Peanuts-12 ,Dry red
chilly -2 chopped, Grated coconut- ½ cup, coriander leaves -a few , lime -1/2.
Method
1. Heat oil in a pan, add mustard,
let it crackle, add red chilly, urad dal, chana dal and peanuts one by one, sauté
the dals, till it turns golden.
2. Next add chopped small onion, green
chilly, ginger, turmeric pdr and sauté well. Now add the chopped potato and sauté
till it become soft and cooked. Then add the cooked green peas (optional) and
stir well. Finally add salt, sugar and curry leaves and mix well.
3. Rinse the aval or poha with water
in a strainer so that the aval get softened. To this add grated coconut,
coriander leaves, drop juice of ½ lime and mix gently.
4. Mix the aval or poha into the onion
mix, stir to ensure that everything is mixed evenly and cook in low flame for
5-6 mts so that the aval upma will steam cook for some time.
5. Serve hot with chutney.
