GOAN CHICKEN FRY
Ingredients
Chicken -1 kg(cut into pieces), Red
Chillies -8-10 (soaked in vinegar), Cumin-1 tsp/5g, Pepper corns-1 tsp/2.33g, Cloves-5,
Ginger -4 cm, Garlic – 1 small pod, mustard- 1 tsp / 5g,Turmeric pdr-1 tsp/2.50g,Vinegar-1
tsp, Tomatoes -4 medium size, Salt- to taste, Oil- 5 tbsp/75ml
Method
1.
Wash
and clean the chicken pieces and keep aside.
2.
Blanch
peel and chop the tomatoes.
3.
Grind
all the ingredients from red chillies to turmeric pdr adding vinegar and
chopped tomatoes to a smooth paste.
4.
Marinate
the chicken pieces with the paste adding salt and keep aside for 1 hr.
5.
Heat
oil in a pan, add the marinated chicken pieces and cook stirring till the
chicken and masala are well fried.Sprinkle crushed pepper before serving
6.
Transfer
to a serving bowl.
7.
Serve
hot with rice or chappatis.
