NUTS-RAISINS MUFFIN
Ingredients
Egg-2, Butter-100g, Powdered Sugar-100
g, All purpose flour/Maida-100 g, Nuts –kismis-100 g each, Baking powder-2 tsp,
Vanilla essence-2 tsp, Cold milk – ½ cup,
Cinnamon powder- ½ tsp
Method
1.Pre-heat the oven to 180c for 10-
15 mts
2.Grease a muffin pan, spray some
flour and keep aside.
3.In a bowl beat the butter and powdered
sugar with an electric blender until pale and fluffy.
4.Add the room temperature eggs one by one
into the butter mixture and
blend well.
5.Sift the flour and baking powder and
mix gently to the butter mix adding cinnamon powder, vanilla essence and milk.
Mix with a spatula until it is combined well, then add nuts and raisins by cut
and fold method. Divide the mixture evenly into the muffin pan about half full.
6.Bake in preheated oven in 180c for 10-15 mts or until golden brown or a
skewer inserted in the centre of a muffin comes out clean . Remove from the
oven after 10 mts and allow to cool on
wire rack. Enjoy your muffin .
