SET DOSA
Ingredients
Raw rice -2 cups/ 450 gm, Urad dal- ½ cup/100gm, Fenugreek
seeds -1 tsp/4 gm,
Beaten rice/poha/aval (thin variety) -1 cup/ 160gms,
Ghee/oil – for sprinkling
Method
1.Wash rice and dal, add fenugreek and soak together for 4
hrs.
2.Soak beaten rice in 1 ½ cup water separately.
3.Grind all items together, add salt and keep it for fermentation
for 8 hrs.
4.The batter should be thinner than normal dosa. Ensure that
the batter is fully fermented and should rise in its level.
5.Heat dosa tawa/pan, sprinkle a little water and gently wipe
it off with a tissue.
6.Stir the batter gently and pour a ladle of it on the pan. Allow
it to spread on its own, (set dosa is like pancake, little thick and fluffy)
put some Ghee or oil over it and along the edges.
7.Then cover the pan and allow the dosa to be cooked in its
steam on medium flame for a few mts till the top surface is full of tiny holes
and the batter is cooked through. (If the holes do not form on the top surface,
add little soda to the batter)
8.Flip the dosa on the other side to cook.
9.Serve the set dosa hot with chutney of your choice.
