OLAN
Ingredients
Kumbalanga (ash gourd) -200gm, van payar
(brown peas or red cow beans) -100gm, Green chilly -3 big , curry leaves- 2 stems, Coconut oil- 3 tsp (15g) , Salt as required, Coconut milk
thick -2 cups (500g).
Method
1.
Chop
the kumbhalanga into medium pieces; slit the green chilly and cut into 2 pieces
and cook with salt adding minimum water till it become tender.

Soak
the van payar over night and cook in a cooker for 3 whistles.
3. Add the cooked payar (do not add stock) to
the kumbhalanga and mix well. To this add coconut milk and again stir well. Then on a low flame gently heat the olan curry for a few minutes (do not boil).

Finally add curry leaves and salt (if needed) and turn off the flame . Then add 2-3 teaspoon of coconut oil, cover with a lid and let the
flavor infuse.
5.
After
½ hr the olan is ready to serve with steamed rice
