PINEAPPLE CURRY




Ingredients

1.      Pineapple (ripe)  -1cup cut into small pieces
2.      Red chilly powder -2tsp
3.      Coriander powder - 1tsp
4.      Turmeric powder - ½ tsp
5.      Urad dal - 1tsp
6.      Channa dal - 1tsp
7.      Raw rice -1tsp
8.      Asafoetida - a pinch
9.      Curry leaves - a few
10.  Mustard – ¼ tsp
11.  Fenugreek – ¼ tsp
12.  Dry red chilly -1 cut into 2pieces
13.  Tamarind  -small marble size soak in 2cups  of water
14.  Tomato - 2 cut into small pieces
15.  Jaggery - 2tbsp
16.  Salt
17.  Oil

Method

1.      Heat 2tsp of oil in a pan and roast Urad dal, channa dal, rice, Asafoetida and curry leaves. Then add the chilly, coriander and turmeric powders with it, grind it and keep aside.

2.      Heat 1tbsp oil add mustard, fenugreek dry red chilly and Curry leaves, let it splutter, then add ground masala, sauté well, add tamarind water and salt, bring to boil.

3.      To the above, add pineapple and tomatoes pieces, cook well and boil in medium heat until the gravy reduces into half.

4.      Finally add jAggery, when the gravy thickens, turn off the flame.

5.      Serve with rice.
