EGG MASALA



Ingredients

1.      Egg - 4
2.      Onion -3sliced
3.      Tomato -2 chopped
4.      Curd -4 tbsp
5.      Cashew nut – 1/3 cup
6.      Ginger garlic paste -2tbsp
7.      Cinnamon – 1 small piece
8.      Cloves -2
9.      Jeera -1tsp
10.  Kashmiri chilly powder -2tbsp
11.  Egg fry masala or any masala -2tsp
12.  Coriander powder - 1tsp
13.  Turmeric powder – ½ tsp
14.  Oil
15.  Salt
16.  Sugar 1 tbsp

Method

1.      Boil the eggs and cut into halves.

2.      Heat oil in a pan, deep fry the sliced onion to light golden colour, grind it and keep aside.

3.      Soak the cashew nuts and grind to a smooth paste.

4.   Heat the pan with same oil (2 tbsp) that used for frying onion, add cinnamon, cloves and jeera, sauté, then add ginger garlic paste, sauté, add chilly, masala, coriander & turmeric powders and  salt; sauté till the raw smell goes.

5.    To the above add chopped tomatoes, fry well until mashy, then add curd and cook until the oil comes up; add fried onion paste and mix well.

6.    Then add cashew paste and adequate water for gravy, boil in medium flame adding sugar to adjust the flavours.


7.      Finally add the cut eggs and boil for few more mins. Serve hot with appam.
