SWEET KOZHUKKATTA (DUMPLINGS)
Ingredients
1. Roasted rice flour-1 cup (can use
idiyappam podi)
2. Boiled water-1 cup
3. Jaggery-100gms
4. Grated coconut 1 cup
5. Ghee- 1tbsp
6. Crushed cardamom-1 /2 tsp
7. Salt-a pinch
Preparation
For the dough
Add salt to the boiling water and pour it slowly
into the rice flour. Stir it with a wooden spoon and keep aside to cool enough to
knead with hand. Then knead the dough well and make it to soft balls and keep
aside.
For
filling
1.In a pan, melt the jaggery with ¼ cup
water by stirring it. In another pan add grated coconut and jaggery and cook
till the water is dried up, add ghee and cardamom powder, remove from fire and
keep it aside for cooling.
2.Make lemon sized balls out of the dough
and apply some oil in your palm, flatten the dough and fold it inwards like a
cup. Place a spoonful of fillings in the
centre and cover it with the dough to make a ball.
3.Steam the dumplings in a steamer till it is done (Prick it with a tooth pick and if it is clean, it is done). Serve warm.
