LADY'S FINGER CURRY (VENDAKAYA)





Ingredients

1.  Lady’s finger – ½ kg
2.  Small onions -100 gms
3.  Tomato -2 chopped
4.  Ginger- 1 inch
5.  Green chilly - 4 chopped
6.  Coriander pdr -2 tsp
7.   Chilly pdr -2 tsp
8.  Turmeric pdr -1 tsp
9.  Tamarind -1 lemon size
10. Salt
11. Coconut oil
12. Mustard seeds -1tsp
13. Dry red chilly -2
14. Jeera -1tsp
15. Asafoetida -a pinch
16. Coconut -1 cup (grind into fine paste)
17. Curry leaves

Method

1.Cut the lady’s finger and small onions into small pieces. 

2.Heat oil in a pan add items 12-14, sauté, add chopped ginger, green chillies, lady’s finger and small onions and sauté till it becomes soft. 

3.To the above add the powders 6-8 and sauté till raw smell goes. Then add the chopped tomatoes and salt, when the tomatoes are done add the tamarind water (soaked in 3 cups of water) and boil for few mts. Finally add the coconut paste, curry leaves and salt if needed. 

4.Serve hot with rice.
