EGG PANIYARAM
Ingredients
1. Idili batter -1 cup
2. Egg -2
3. Onion -1finelly chopped
4. Carrot -1 grated
5. Beans -100gms finely chopped
6. Green chilly - 3 chopped
7. Ginger-1 inch finely chopped
8. Asafoetida - a pinch
9. Oil
10. Mustard -1 tsp
11. Urad dal -1 tsp
12. Curry leaves -2 stems
13. Salt
Preparation
1.Heat
a frying pan, add 2 tbsp oil and add items 10-12, sauté for few minutes and add
items 3-8 one by one, sauté well and keep aside.
2.Beat the eggs and add this to the idili batter and mix thoroughly. To this, add the sautéd items and salt and again mix well.
3.Heat an unniyappam kara (paniyarakal), fill oil in each cavity and pour paniyaram batter in each cavity. Cook in medium heat and after a few minutes flip it and cook the other side too. When both sides become golden brown in colour, remove from the pan and serve hot with chutney.
