NEI PAYASAM

 



Ingredients

  1. Unakkalari (hand- made raw rice with bran) - 250 gm
  2. Water – 8 cup
  3. Jaggery -3/4 kg/ 750 gm
  4. Ghee – 350 gm
  5. Coconut chopped finely- 3 tbsp
  6. Cashew nuts – 20
  7. Raisins – 25
  8. Cardamom – 2 tsp
  9. Kalkkandam / sugar candy– ¼ cup crushed

Method

  1. In an uruli or a thick bottom pan, boil 8 cups of water and add washed rice and cook until soft.
  2. Add melted jaggery and cook in low flame adding ghee until it becomes semi thick (don’t cook very thick as it will harden after cooling down).
  3. Heat ghee and roast cashew and raisins and coconut pieces add this to the payasam.
  4. Finally add crushed kalkkandam & cardamom and mix well.
  5. Add the jaggery only when the rice is cooked well.
  6. This paysam is very rich hence served only in small quantity.
