NEI PAYASAM
Ingredients
- Unakkalari (hand- made raw rice with bran) - 250 gm
- Water – 8 cup
- Jaggery -3/4 kg/ 750 gm
- Ghee – 350 gm
- Coconut chopped finely- 3 tbsp
- Cashew nuts – 20
- Raisins – 25
- Cardamom – 2 tsp
- Kalkkandam / sugar candy– ¼ cup crushed
Method
- In an uruli or a thick bottom pan, boil 8 cups of water and add washed rice and cook until soft.
- Add melted jaggery and cook in low flame adding ghee until it becomes semi thick (don’t cook very thick as it will harden after cooling down).
- Heat ghee and roast cashew and raisins and coconut pieces add this to the payasam.
- Finally add crushed kalkkandam & cardamom and mix well.
- Add the jaggery only when the rice is cooked well.
- This paysam is very rich hence served only in small quantity.
