VADA KOOTTU CURRY
Ingredients
- Urad Dal – ½ cup
- Potato -2peeled and cut into cubes and boiled
- Green Chilly -2
- Ginger – 1 chopped to small pieces
- Curry leaves - a few
- Thin coconut milk – 1 cup
- Thick coconut milk – 2cup
- Black pepper -2 tsp crushed
- Turmeric powder – 1 tsp
- Chilly powder – 2 tsp
- Coriander powder -2tsp
- Meat masala – 2 tbsp
- Salt as needed
For seasoning
- Ghee – 2 tbsp
- Mustard seeds -2 tsp
- Dry red chilly – 2 broken
- Shallots – 5 chopped
- Oil for deep frying the vada
- Curry leaves
Method
- Soak the urad dal for 2 hrs and drain the water completely, then grind
adding salt, few pepper corns, 1 green chilly and ginger to a smooth paste
adding little water as required.
- Heat oil in a frying pan drop small portions of the batter and fry
them until golden brown and drain on to a tissue paper and keep aside.
- In a pan, boil the fried vada and boiled potatoes in thin coconut
milk under medium heat, then add few curry leaves, crushed pepper, turmeric, chilly,
coriander and meat masala and salt. When
the gravy starts to thicken, add thick coconut milk, continue boiling for few
more mins.
- Heat ghee in a pan add the seasonings and fry the shallots until
light brown, pour this to the Vada Koottu Curry (the curry will thicken after
cooling hence add enough thin coconut milk if needed).
- Serve as side dish with rice.
