ISHTTU (POTATO STEW) KERALA STYLE
Ingredients
- Potato – 4 medium cut into cube size
- Green chilly – 5 slit
- Ginger -2 inch piece finely chopped
- Coconut milk – 1 ½ cup
- Water – ½ cup
- Salt as needed
- Curry leaves – 1 spring
- Coconut oil
Method
- In a pressure cooker cook cubed potatoes with green chilly, ginger and salt adding ½ cup water for 3 whistles. Once cooled tansfer it to another pan, then mash the potatoes to get a thick gravy.
- To the above, add coconut milk and bring to boil in low flame and continue to cook uncovered until the gravy becomes thick and creamy. Thereafter, add curry leaves and drizzle coconut oil, then cover the pan with a lid and let it rest for few mins.
- Serve as side dish with rice for sadya.
