CHICKEN FRIED RICE
INGREDIENTS

Basmati rice -2 cups

Chicken (cooked and shredded) -2 cups
3.
Onion-1 finely chopped
4.
Garlic -3 tbsp chopped
5.
Spring Onion-3 tbsp
6.
Capsicum -1 finely chopped
7.
Carrot – 1 finely chopped
8.
Cabbage - ½ cup finely chopped
9.
Green peas - 1/2 cup
10.
Soya sauce-1 tsp
11.
Chilly sauce – 1tsp

Salt

Eggs - 4

Crushed pepper - 2 tsp
Method
1.Cook
the chicken pieces adding 4 cups of water, salt & 2 tsp garlic. Drain out
the chicken pieces and cook the rice with the chicken stock (4 cups) until all
the water evaporates.
2.Heat oil in a frying pan, add chopped garlic, sauté till it become golden brown. To it add onion, sauté and after few minutes, add the vegetables and little salt, sauté it without adding any water.
3.When it is done, make a hole in the centre; add eggs and pepper, scramble, and then mix well with the vegetables by adding the sauces and the shredded chicken.
4.Finally, add the cooked rice and mix well.
5.Sprinkle the chopped spring onions on the top, before serving hot.
