VEGETABLE BONDA
Ingredients
1. Potato (cubed) -1/2 cup
2. Carrot medium size (cubed) -1
3. Green peas -1/2 cup
4. Beans -1/4 cup (chopped)
5. Onions -1/2 cup (finely chopped)
6. Green chilly -2(chopped)
7. Ginger -1 inch
8. Turmeric -1/4 tsp
9. Chaat masala or garam masala-1 tsp
10. Lime juice-2 tsp
11. Raisins -1tbsp
12. Salt
13. Curry leaves or coriander leaves-chopped -2tbsp
14. Oil - 3 tsp
15. Cumin -1tsp
16. Fennel seeds -1 tsp
For Batter
1. Besan (gram flour) -1 cup
2. Rice flour - 2tbsp
3. Kashmiri chilly powder -1tsp
4. Salt
5. Hing or asafoetida -a pinch
6. Baking soda - a pinch
7. water - as required
INSTRUCTIONS
1.Steam the vegetables and mash it.
2.Heat oil in a pan and add items 13, 15 &16. Let it splutter, then add items 11, 5, 6, &7, sauté, now add items 8, 9&12 again sauté, add steamed and mashed vegetables, lime juice and mix well.
3.Prepare small sized ball from vegetable mixture and keep it aside.

4.Then mix the besan and rice flour in a bowl, add
enough water, salt, then add all the ingredients for the batter, mix well
to get a thick pourable consistency.
5.Heat enough oil to fry the bonda. Once the oil is sufficiently hot, dip the prepared balls in the batter carefully place into the hot oil. Deep fry the bonda until golden brown. Once done, remove and drain the excess oil.
6.Serve hot with coconut chutney.
