ALOO PARATHA


 

Ingredients

1.      Potato -4 medium (boiled)
2.      Green chilly -3
3.      Ginger -1 inch piece
4.      Red chilly powder -2 tsp
5.      Jeera powder -1tsp
6.      Chaat masala -1tsp
7.      Salt
8.      Coriander leaves (finely chopped ) - a handful

For dough

1.       Wheat flour -2 cup
2.      Oil - 2 tsp
3.      Salt
4.      Water -as required
5.      Ajwain - 1tbsp

Preparation

To make potato masala, grate the boiled potato, add crushed green chilly, ginger and Items 4 to 8, mix well without lumps and make the mix into lemon sized balls and keep aside.  For making dough, put the wheat flour in a large bowl, add water gradually and make soft smooth dough. Make the dough into lemon sized balls and roll them into 4 inch circles, place the potato fillings in the centre, press and seal the edges with your finger tips, dust some flour on the stuffed paratha, roll slightly thick and press the rolling pin gently and evenly on all sides (press very lightly so that the mixture does not come out). Place the paratha on a hot thava and roast them on both sides to golden brown applying butter on both sides. Serve hot with butter, raitha, pickle etc.
