STUFFED VENDAKKA/ LADY’S FINGER/OKRA FRY
Ingredients
- Vendakka (tender) -250gms
- Shredded coconut -1 cup
- Ginger –garlic paste – 1 tbsp
- Green chilly – 4
- Turmeric powder – ½ tsp
- Lemon juice – 1 tbsp
- Sugar – 2 tbsp
- Salt
For seasoning
- Oil – 3 tbsp
- Jeera- 2 tsp
- Asafoetida powder – ½ tsp
- Chilly powder – 2 tsp
- Coriander powder – 1 tsp
- Curry leaves a few
Method
- Wash vendakka/okra in running water, wipe out the moisture with a clean cloth, trim and slit open in the middle.
- Grind coconut, green chilly, ginger- garlic paste, salt, turmeric powder, lemon juice and salt together to a coarse paste and fill the coconut mix into the slit portion of okra and keep aside.
- Heat oil in a pan, add jeera let it crackle; add curry leaves, asafoetida, chilly and coriander powders, sauté for a min.
- Then place the stuffed vendakka in the pan and shallow fry it in medium flame till done.
- Stuffed okra fry is ready to serve with roti or plain rice.
