STUFFED VENDAKKA/ LADY’S FINGER/OKRA FRY


 

Ingredients

  1. Vendakka (tender) -250gms
  2. Shredded coconut -1 cup
  3. Ginger –garlic paste – 1 tbsp
  4. Green chilly – 4
  5. Turmeric powder – ½ tsp
  6. Lemon juice – 1 tbsp
  7. Sugar – 2 tbsp
  8. Salt

For seasoning

  1. Oil – 3 tbsp
  2. Jeera- 2 tsp
  3. Asafoetida powder – ½ tsp
  4. Chilly powder – 2 tsp
  5. Coriander powder – 1 tsp
  6. Curry leaves a few

Method

  1. Wash vendakka/okra in running water, wipe out the moisture with a clean cloth, trim and slit open in the middle.
  2. Grind coconut, green chilly, ginger- garlic paste, salt, turmeric powder, lemon juice and salt together to a coarse paste and fill the coconut mix into the slit portion of okra and keep aside.
  3. Heat oil in a pan, add jeera let it crackle; add curry leaves, asafoetida, chilly and coriander powders, sauté for a min.
  4. Then place the stuffed vendakka in the pan and shallow fry it in medium flame till done.
  5. Stuffed okra fry is ready to serve with roti or plain rice.
