POTATO MASALA CURRY

 


Ingredients

  1. Potato – 5
  2. Onion – 3 finely chopped
  3. Tomato – 2 chopped
  4. Green chilly -4
  5. Ginger – 1 small piece
  6. Garlic – 8
  7. Turmeric powder – 1 tsp
  8. Chilly powder- 2 tbsp
  9. Coriander powder – 1 tbsp
  10. Pepper powder – 1 tsp
  11. Garam masala – 1tsp
  12. Bay leaf-1
  13. Cardamom – 2
  14. Cinnamon – 1 small piece
  15. Cloves - 4
  16. Fennel seeds – 1 tsp
  17. Jeera – 1tsp
  18. Coconut milk – ½ cup
  19. Salt as needed
  20. Curry leaves – 2 strings
  21. Oil – 2 tbsp

Method  

  1. Peel and boil the potatoes, cut to small pieces and keep aside.
  2. Grind green chilly, ginger and garlic to a coarse paste keep aside.
  3. Heat oil, add bay leaf, cardamom, cinnamon, cloves, jeera and fennel seeds, sauté well.
  4. Add ground paste, sauté well, then add finely chopped onion and salt sauté till light brown in colour.
  5. Then add chopped tomato, sauté until soft, add turmeric, chilly, coriander, pepper & garam masala  powders, sauté till the raw smell goes.  
  6. To the above add 2 cups of water and boiled potatoes, continue boiling in medium heat add coconut milk and curry leaves , check salt and turn off the flame.
  7. SERVE HOT WITH APPAM /IDIDYAPPAMS
