POTATO MASALA CURRY
Ingredients
- Potato – 5
- Onion – 3 finely chopped
- Tomato – 2 chopped
- Green chilly -4
- Ginger – 1 small piece
- Garlic – 8
- Turmeric powder – 1 tsp
- Chilly powder- 2 tbsp
- Coriander powder – 1 tbsp
- Pepper powder – 1 tsp
- Garam masala – 1tsp
- Bay leaf-1
- Cardamom – 2
- Cinnamon – 1 small piece
- Cloves - 4
- Fennel seeds – 1 tsp
- Jeera – 1tsp
- Coconut milk – ½ cup
- Salt as needed
- Curry leaves – 2 strings
- Oil – 2 tbsp
Method
- Peel and boil the potatoes, cut to small pieces and keep aside.
- Grind green chilly, ginger and garlic to a coarse paste keep aside.
- Heat oil, add bay leaf, cardamom, cinnamon, cloves, jeera and fennel seeds, sauté well.
- Add ground paste, sauté well, then add finely chopped onion and salt sauté till light brown in colour.
- Then add chopped tomato, sauté until soft, add turmeric, chilly, coriander, pepper & garam masala powders, sauté till the raw smell goes.
- To the above add 2 cups of water and boiled potatoes, continue boiling in medium heat add coconut milk and curry leaves , check salt and turn off the flame.
- SERVE HOT WITH APPAM /IDIDYAPPAMS
