SWEET DIAMOND CUTS
Ingredients
All purpose flour/Maida – 250gms
Sugar – 5ogms
Ghee – 30 gms
Baking soda – a pinch
Oil – for frying
Water as required
Method
Take a mixing bowl, add flour, sugar, ghee and baking soda,
rub with your fingers to a coarse crumb, then knead it to smooth dough adding
water slowly and keep aside for ½ hr.
Grease a rolling board, roll the dough to thin roti and begin
to draw lines diagonally with ¾ to 1 inch apart starting from corners to get
diamond cuts. Then transfer each piece to a greased plate.
Heat oil in a pan, keep in medium flame and then begin to
drop a few diamond pieces into the oil and deep fry by stirring. When the
pieces turn golden brown uniformly, drain them to a paper tissue.
Continue frying the remaining pieces in batches, allow them cool
completely, and then transfer to an air tight jar.
Enjoy as tea time snacks.
