SAMBAR RICE



Ingredients

  1. Raw rice /Basmati rice – 1 cup
  2. Chick peas/tuvar dal – ½ cup
  3. Tamarind -1 lemon size (soaked in ½ cup warm water)
  4. Turmeric powder – 1tsp
  5. Shallots – ½ cup
  6. Carrots, potato, pumpkin, brinjal – 2 cups
  7. Green chilly – 4 chopped
  8. Tomato – 2 chopped
  9. Salt as needed

For grinding

  1. Shredded coconut – ¼ cup,
  2. Bengal gram/ channa dal – 2 tbsp
  3. Dry red chilly - 6
  4. Pepper corns – 1 tsp
  5. Fenugreek – 1tsp
  6. Coriander seeds – 2 tbsp
  7. Garlic – 3 cloves
  8. Ginger – 1 tsp chopped
  9. Onion – 1 chopped
  10. Oil – 2 tbsp

For seasoning

  1. Ghee -2 tbsp
  2. Mustard seeds – 2 tbsp
  3. Dry red chilly – 2 broken
  4. Asafoetida – ¼ tsp
  5. Curry leaves -2 strings
  6. Jaggery – 1tbsp

Method

  1. Extract the juice of the soaked tamarind and keep aside.
  2. Heat oil in a pan and roast fenugreek, pepper corns, coriander seeds, Bengal gram and red chilly in medium flame for few mins, remove from pan.  In the same pan, add shredded coconut, onion, ginger and garlic, sauté until light brown and turn off the flame; let it cool and grind to a smooth paste.
  3. Heat ghee in a pan add the items for seasoning, then add shallots, sauté, to it add the vegetables, turmeric powder, salt and tamarind juice along with enough water. Cover and cook until the vegetables become soft, then add ground spice paste and jaggery, boil for another 5 mins and turn off the flame.
  4. Cook the washed dal and rice in a pressure cooker adding 4 ½ cups of water and enough salt, cook for 3 whistles in high flame and 2 whistles in low flame. Once the dal rice mix is cooked add the sambar paste and mix nicely.
  5. Sprinkle some ghee and SERVE HOT WITH PAPPADAMS AND ENJOY YOUR ONE POT MEAL!!
