VENDAKKA-OKRA KICHADI
Ingredients
1. Vendakka (cut into round shape) – ½ kg
2. Grated coconut – ½ cup
3. Mustard seeds - 1tbsp
4. Green chilly - 4
5. Yogurt - 2 cups
6. Salt to taste
7. Curry leaves - 2stems
8. Mustard seed -1tsp
9. Dry red chilly
10. Oil -2 tbsp
Preparation
1.Grind items 2-4 together into a fine paste. Cook the coconut
paste in a pan in low heat till raw smell goes and add salt. When it is cooled add yogurt and keep aside.
2.Heat oil in a pan, add mustard, red chilly and curry leaves,
once they splutter add the sliced vendakka and fry in medium heat until they
turn crisp and slight brown. Add this to
the coconut – yogurt mixture, mix well and serve with rice.
