VEG RAVA IDILI




Ingredients

1.      Rava /sooji/semolina -1 cup (roasted)
2.      Yogurt/curd -3/4 cup
3.      Water -as required
4.      Salt
5.      Coriander leaves –a few
6.      Eno fruit salt -1 sachet or baking soda – ½  tsp
7.      Oil - 4 tbsp
8.      Mustard -1 tsp
9.      Chana dal -1tsp
10.  Urad dal -1 tsp
11.  Asafoetida / hing -a pinch
12.  Red chilly -2 chopped
13.  Curry leaves – a few
14.  Ginger -1 inch  finely chopped
15.  Green chilly -2 finely chopped
16.  Carrot  -1 grated
17.  Onion -1 finely chopped
18.  Greepeas-1/2 cup
19.  Beans -4 finely chopped
20.  Cashew nuts for decoration
21.  Turmeric – ¼ tsp.

Method

1.Roast 1 cup rava in a pan on low flame for 5 mits. Then Cool the rava and transfer to a bowl.

2.To this add the curd and little water mix well and rest it for 20 mts until the rava absorbs water.  Then add enough water to the rava mix  to form idili batter consistency, stir well and keep aside.

3.Heat oil in a pan add mustard, chana dal, urad dal, hing (asafoetida), curry leaves and red chilly, allow to splutter, then add ginger and green chilly, sauté well, now add the chopped onion, carrot, beans and  green peas, sauté till the raw taste is gone. 

4.Next add turmeric, salt as needed, coriander leaves and mix.

5.After cooling, add this to the batter, mix gently and just before steaming add the Eno mix well till it turns frothy.

6.Pour the batter immediately into the idili plate (do not rest the batter after adding eno). Steam the idili for 15 mts or till it is done.

7. Serve with chutney or sambar.
