PAVAKKAI OR BITTER GOURD CURRY




Ingredients

1.      Pavakkai (finely chopped) – ¾ cup
2.      Onion -  1 finely chopped
3.      Green chilly  - 4 chopped
4.      Ginger(chopped) - 1 sp
5.      Sambar powder -2 tsp
6.      Tamarind paste – 2 tbsp
7.      Asafoetida powder-1/4 tsp
8.      Curry leaves – 2 stem
9.      Coconut oil -2 tbsp
10.  Garlic -8 cloves chopped
11.  Dry red chilly -2
12.  Fenugreek – ¼  tsp
13.  Mustard -1 tsp
14.  Jaggery - to balance the bitterness of the pavakkai

Preparation

1.Heat oil in a pan add items 8,10,11,12,&13 and sauté till it  turns aromatic, then add  items 2,3,& 4, sauté , add the pavakkai and sauté until it become slight brown. 

2.To the above add the sambar pdr and asafoetida, stir well, then add tamarind paste, salt and ½ cup of water and bring to boil.  

3.Finally add jaggery according to your taste. 

4.Serve after 2 hrs or more.
