BANANA COCONUT FRITTERS
ingredients
- Nenthra pazham (banana) – 4
- All purpose flour- ¼ cup
- Rice flour – ¾ cup
- Water as needed
- Shredded coconut – ½ cup
- White sesame – ¼ cup
- Sugar – 2 tbsp
- Salt a pinch
- Baking soda – ¼ tsp
- Oil for deep frying
Method
- Peel and cut the banana length wise and keep aside.
- Mix rice flour, all purpose flour, sugar and salt together in a mixing bowl. To it add sesame seeds and shredded coconut, then gradually add water and mix gently to make slightly thick consistency batter so that it coats the banana slices very well.
- Heat oil in a frying pan and then reduce the flame into medium heat. Dip banana pieces in the batter (make sure that each slice is thoroughly coated), drop into the hot oil and deep fry. Occasionally flip them over to ensure even frying.
- Once they are golden brown and crispy, drain on a paper tissue. SERVE WHEN IT IS CRISPY AND HOT.
