AYALA CURRY
Ingredients
- Ayala / mackerel - 4
- Tomato – 4
- Shallots - 1 cup
- Garlic - 8
- Ginger – 1 small piece
- Pepper powder – 2 tsp
- Coriander powder – 2 tbsp
- Fenugreek – 1 tsp
- Turmeric powder- ½ tsp
- Onion – 1 chopped
- Green chilly – 4
- Curry leaves – 2string
- Kudampuli – 4 pieces
- Salt as needed
- Oil – 2 tbsp
Method
- Clean and wash the fish and cut into pieces.
- Soak the kudampuli in ½ cup water for 10 mins.
- Grind together tomato, shallots, ginger, garlic, pepper, coriander to fine masala paste.
- Heat oil in a pan add fenugreek, let it splutter, add curry leaves, turmeric powder, chopped onion and chopped green chilly, sauté well until light brown, add ground masala and mix well.
- To the above add soaked kudampuli, fish pieces, enough water & salt and cook uncovered in medium heat to boil; continue cooking until the oil comes up.
- Serve hot with rice.
