POTATO MASALA



Ingredients

  1. Potato - 5 boiled and crushed
  2. Tomato -3 chopped
  3. Ginger Garlic paste - 2 tbsp
  4. Onion - 2 finely chopped or  grated 
  5. Kashmiri red chilly powder - 2 tbsp
  6. Turmeric powder - 1tsp
  7. Coriander powder - 1 1/2 tsp
  8. Garam Masala -  1 tsp
  9. Dry Red chilly - 2 
  10. Mustard -1 tsp
  11. Ajwain -1/2 tsp
  12. Fennel seeds - 1 tsp
  13. Asafoetida - a pinch
  14. Kasuri Methi - 1 tsp
  15. Curry leaves - a few
  16. Bay leaf -1 
  17. Cardamom - 2 
  18. Cinnamon - 1 small piece
  19. Salt as needed
  20. Oil as needed

Method

  1. Heat oil and add Mustard, Red chilly, Ajwain, Bay leaf, Curry leaves, Fennel seeds, Cinnamon, Cardamom one by one, saute well,  add the grated onion, saute until light brown.
  2. Then add Asafoetida, Kashmiri Red chilly, Turmeric,Garam masala & Coriander powders, saute till raw smell goes. 
  3. To the above add tomatoes, saute until pulpy, then add 2 cups of water, boiled & crushed  potatoes and salt, bring to boil in medium heat. 
  4. Finally add kasuri methi and turn off the stove.Serve hot with ROTI.
