POTATO MASALA
Ingredients
- Potato - 5 boiled and crushed
- Tomato -3 chopped
- Ginger Garlic paste - 2 tbsp
- Onion - 2 finely chopped or grated
- Kashmiri red chilly powder - 2 tbsp
- Turmeric powder - 1tsp
- Coriander powder - 1 1/2 tsp
- Garam Masala - 1 tsp
- Dry Red chilly - 2
- Mustard -1 tsp
- Ajwain -1/2 tsp
- Fennel seeds - 1 tsp
- Asafoetida - a pinch
- Kasuri Methi - 1 tsp
- Curry leaves - a few
- Bay leaf -1
- Cardamom - 2
- Cinnamon - 1 small piece
- Salt as needed
- Oil as needed
Method
- Heat oil and add Mustard, Red chilly, Ajwain, Bay leaf, Curry leaves, Fennel seeds, Cinnamon, Cardamom one by one, saute well, add the grated onion, saute until light brown.
- Then add Asafoetida, Kashmiri Red chilly, Turmeric,Garam masala & Coriander powders, saute till raw smell goes.
- To the above add tomatoes, saute until pulpy, then add 2 cups of water, boiled & crushed potatoes and salt, bring to boil in medium heat.
- Finally add kasuri methi and turn off the stove.Serve hot with ROTI.
