VENDAKKA TOMATO CURRY
Ingredients
- Ladies finger /vendakka-1/2 kg (washed and cut 1 inch length)
- Shallots - 100gm (peeled and cut length wise)
- Tomato - 2 cut 1 inch piece
- Ginger - 1 small piece chopped
- shredded coconut - 1/2 cup
- Green chilly - 5 chopped
- Coriander powder -2 tsp
- Red c hiily - 4 tsp
- Turmeric powder - 1/2 tsp
- Tamarind - lemon size
- Mustard - 1 tbsp
- Urad dal - 1 tbsp
- Dry Red chilly -2
- Curry Leaves a few
- Salt
- Oil as needed
Method
- Soak the tamarind in1/2 cup warm water for 15 mins.
- Grind the shredded coconut into a fine paste.
- Heat oil in a pan, add the mustard, urad dal, red chilly and curry leaves, saute well.
- Then add chopped ginger, green chilly and shallots, saute until light brown.
- To it add chopped vendakka, liitle salt and tamrind water (1 tsp), saute well, add turmeric, chilly and coriander powders until raw smell goes.
- Then add tomatoes, saute till soft, then add coconut paste, tamarind and enough water to the get semi thick gravy.
- Finally add few curry leaves, stir and serve hot with RICE.
