VENDAKKA TOMATO CURRY



Ingredients

  1. Ladies finger /vendakka-1/2 kg (washed and cut 1 inch length) 
  2. Shallots - 100gm (peeled and cut length wise) 
  3. Tomato - 2 cut 1 inch piece
  4. Ginger - 1 small piece chopped
  5. shredded coconut - 1/2 cup
  6. Green chilly - 5 chopped 
  7. Coriander powder -2 tsp
  8. Red c hiily - 4 tsp
  9. Turmeric powder - 1/2 tsp
  10. Tamarind - lemon size
  11. Mustard - 1 tbsp
  12. Urad dal - 1 tbsp
  13. Dry Red chilly -2 
  14. Curry Leaves a few
  15. Salt 
  16. Oil as needed

Method 

  1. Soak the tamarind in1/2 cup  warm water for 15 mins.
  2. Grind the shredded coconut into a fine paste.
  3. Heat oil in a pan, add the mustard, urad dal, red chilly and curry leaves, saute well.
  4. Then add chopped ginger, green chilly and shallots, saute until light brown.
  5. To it add chopped vendakka, liitle salt and tamrind water (1 tsp), saute well, add turmeric, chilly and coriander powders until raw smell goes.
  6. Then add  tomatoes, saute till soft, then add coconut paste, tamarind and enough water to the get semi thick gravy. 
  7. Finally add few curry leaves, stir and serve hot with RICE.
