MANGO RICE



Ingredients

  1. Raw Mango (Sour) grated with skin - 1 cup
  2. Basmathi Rice - 2 cups
  3. Onion -1 finely chopped
  4. Green Chilly - 4 chopped
  5. Ginger -1 small piece
  6. Chilly Powder - 1 tsp
  7. Turmeric Powder - 1/2 tsp
  8. Asafoetida - 1/4 tsp
  9. Mustard - 1tsp
  10. Dry red chilly - 2 
  11. Curry Leaves - a few
  12. Jeera - 1 tsp
  13. Channa Dal - 2tbsp
  14. Peanut - 2 tbsp
  15. Urad Dal - 2 tbsp
  16. Jaggery - to balance sourness of mangoes
  17. Salt as needed 
  18. Oil - 2 tbsp
  19. Water - 4 cups

Method

  1. Boil 4 cups of water in a deep vessel adding salt, cook the rice till done and keep aside.
  2. Heat oil in a pan, add the seasonings-dry red chilly, mustard, peanuts, channa dal, urad dal, curry leaves and roast it .
  3. Add onion, green chilly and ginger to it, saute well, then add turmeric powder, chilly powder, asafoetida and little salt, saute, add grated mango, saute in medium heat for few mins, finally add jaggery, mix well, remove from fire .
  4. Add cooked cooled rice  to the mango and mix mix well all the ingredients .
  5. SERVE HOT WITH COCONUT CHUTNEY
