EGG KURMA
Ingredients
Boiled Egg- 4, Onion -3 chopped, Green chilly -4, Tomato -2
chopped, Shredded coconut-1 cup, Fennel/sanuf-1 tsp/5 gm, Cashew nut-10, Coriander
leaves- chopped -1 cup/50 gm, Ginger- garlic paste- 1 tbsp/10 gm, Gram masala –
1tbsp/7 gm, Turmeric powder-1/4 tsp, Salt, Oil as needed.
Method
1.Soak the cashew nut in little water for ½ hr. Grind the
coconut and soaked cashews, fennel and coriander leaves adding little water.
2.Heat oil in a pan, add chopped onion & fry until golden
brown, add chopped green chilly, ginger-garlic paste, sauté until raw smell
goes.
3.To the above add chopped tomatoes, turmeric, salt and garam
masala sauté well till the tomatoes become soft.
4.Next add the coconut paste and fry for few mts.
5.Pour water (2 cups) just enough to make thick gravy and
cook in medium heat until the gravy thickens slightly but not too thick.
6.Prick the boiled egg few times and add this to the gravy
and cook for few mts. When you see traces of oil on top, the kurma is done.
7.Switch off the kurma and garnish with few coriander leaves.
8.Serve hot with appam or roti.
