KADAI MUSHROOM
Ingredients
- White button mushroom – 250gm
- Onion -1 big
- Tomato – 2
- Ginger – 1 small piece
- Garlic – 1 tbsp
- Green chilly – 4
- Cashew - 8
- Capsicum /bell pepper – 1 chopped
- Kashmiri chilly powder – 1 tbsp
- Pepper powder – 1 tbsp
- Coriander powder – 2 tsp
- Turmeric powder – 1 tsp
- Salt
- Oil – 2 tbsp
- Mustard – 2 tsp
- Jeera – 1tbsp
- Dry red chilly -2 broken
- Curry leaves - a few
Method
- Wash mushroom in water to remove any dirt and debris, cut them into small pieces and keep aside.
- Grind tomato and onion separately, then grind green chilly, ginger & garlic together and keep aside.
- Soak the cashew nuts in warm water for 20 mins and make paste.
- Heat oil in a pan, add mustard and jeera, let it splutter, add dry red chilly and curry leaves, sauté, then add ginger-green chilly- garlic paste and sauté well.
- To the above add onion paste and salt, sauté until light brown, then add turmeric, chilly, pepper and coriander powders, sauté until raw smell goes.
- To it add tomato puree, sauté until oil comes up, then add the mushroom pieces, sauté for few mins so that the water will oozes out, then add 1/ 2 cup water cover the pan and cook in medium heat for 5 mins.
- Remove the lid, add chopped capsicum and cashew paste, cook in medium heat and boil for few more mins. Finally check salt and turn off the flame.
- Serve hot with Roti/Nan.
