KADAI MUSHROOM

 


Ingredients

  1. White button mushroom – 250gm
  2. Onion -1 big
  3. Tomato – 2
  4. Ginger – 1 small piece
  5. Garlic – 1 tbsp
  6. Green chilly – 4
  7. Cashew - 8
  8. Capsicum /bell pepper – 1 chopped
  9. Kashmiri chilly powder – 1 tbsp
  10. Pepper powder – 1 tbsp
  11. Coriander powder – 2 tsp
  12. Turmeric powder – 1 tsp
  13. Salt
  14. Oil – 2 tbsp
  15. Mustard – 2 tsp
  16. Jeera – 1tbsp
  17. Dry red chilly -2 broken
  18. Curry leaves - a few

Method

  1. Wash mushroom in water to remove any dirt and debris, cut them into small pieces and keep aside.
  2. Grind tomato and onion separately, then grind green chilly, ginger & garlic together and keep aside.
  3. Soak the cashew nuts in warm water for 20 mins and make paste.
  4. Heat oil in a pan, add mustard and jeera, let it splutter, add dry red chilly and curry leaves, sauté, then add ginger-green chilly- garlic paste and sauté well.
  5. To the above add onion paste and salt, sauté until light brown, then add turmeric, chilly, pepper and coriander powders, sauté until raw smell goes.
  6. To it add tomato puree, sauté until oil comes up, then add the mushroom pieces, sauté for few mins so that the water will oozes out, then add 1/ 2 cup water cover the pan and cook in medium heat for 5 mins.
  7. Remove the lid, add chopped capsicum and cashew paste, cook in medium heat and boil for few more mins. Finally check salt and turn off the flame.
  8. Serve hot with Roti/Nan.
