VEG PULAO

 


Ingredients

  1. Basmati rice – 1cup
  2. Water – 2 cup
  3. Green cardamom – 4
  4. Cinnamon – 2 inch piece
  5. Cloves -4
  6. Shahi jeera or jeera – ½ tsp
  7. Garlic – ginger paste – 2 tsp
  8. Green chilly paste – 2 tbsp
  9. Onion – 2 finely chopped
  10. Carrot – 2
  11. Beans – 100gms
  12. Green peas – 100gms
  13. Cabbagge – 100gms
  14. Capsicum -1
  15. Cauliflower – 1 cup chop in small pieces
  16. Salt as needed
  17. Ghee – ¼ cup

Method

  1. Rinse the basmati rice until the water runs clear, soak it for 20 mins. Then strain off all the water from rice and keep aside.
  2. By the time prepare the veggies by chopping them to small pieces.
  3. Heat ghee in a deep pan or thick bottom pot, once the ghee become hot add the whole spices and fry in low flame until the nice smell comes
  4. Then add soaked and drained rice and enough salt fry it for few mins until it starts spluttering.
  5. Then add 2 cups of water bring to boil then lower the flame; once it starts boiling turn off the flame.
  6. Heat ghee in a pan, add green chilly, ginger –garlic paste sauté for few seconds until the raw smell goes away ,then add chopped veggies and little salt, fry well  in medium flame for 10 mins.
  7. When the veggies are almost done add it to the cooked rice, sprinkle some garam masala and close the pan for few mins.
  8. Serve hot with salad and pickle.
