PRAWN MANGO CURRY
Ingredients
- Medium size prawns- 200 gms
- Raw mango – 50gms (or kudampuli - 4)
- Ginger paste – 1 tbsp
- Garlic paste - 2 tbsp
- Green chilly paste -1 tsp
- Shallots finely chopped – 200gms
- Curry leaves – 2 strings
- Kashmiri chilly powder – 4 tbsp
- Coriander powder – 2 tbsp
- Turmeric powder – 1 tsp
- Coconut milk (thick) – 1 cup
- Coconut milk (thin) - 1 cup
For seasoning
- Onion – 1 chopped
- Fenugreek – ½ tsp
- Mustard – 1 tsp
- Curry leaves – 2 strings
- Salt as needed
- Oil – 2 tbsp
Method
- Wash and clean the prawns, mix with chilly, turmeric, coriander powders, then add ginger, garlic & green chilly pastes, mix again, add chopped shallots, chopped curry leaves, raw mango or kudampuli/cocum and salt, and keep aside for marinating for ½ hr.
- Heat a pan (or earthen pot) add marinated prawns and thin coconut milk and cook in medium heat till the prawns are cooked well (abt 20 mins)
- Add thick coconut milk to the above and after 5 mins remove from stove.
- Heat oil in a pan, add seasonings, sauté till the onions are fried well, then add this to the Prawn Mango Curry and cover it with a lid.
- SERVE HOT WITH RICE OR IDIYAPPAMS
