PRAWN MANGO CURRY


 

Ingredients

  1. Medium size prawns- 200 gms
  2. Raw mango – 50gms (or kudampuli - 4)
  3. Ginger paste – 1 tbsp
  4. Garlic paste - 2 tbsp
  5. Green chilly paste -1 tsp
  6. Shallots finely chopped – 200gms
  7. Curry leaves – 2 strings
  8. Kashmiri chilly powder – 4 tbsp
  9. Coriander powder – 2 tbsp
  10. Turmeric powder – 1 tsp
  11. Coconut milk (thick) – 1 cup
  12. Coconut milk (thin) - 1 cup

For seasoning

  1. Onion – 1 chopped
  2. Fenugreek – ½ tsp
  3. Mustard – 1 tsp
  4. Curry leaves – 2 strings
  5. Salt as needed
  6. Oil – 2 tbsp

Method

  1. Wash and clean the prawns, mix with chilly, turmeric, coriander powders, then add   ginger, garlic & green chilly pastes, mix again, add chopped shallots, chopped curry leaves, raw mango or kudampuli/cocum and salt, and keep aside for marinating for ½ hr.
  2. Heat a pan (or earthen pot) add marinated prawns and thin coconut milk and cook in medium heat till the prawns are cooked well (abt 20 mins)
  3. Add thick coconut milk to the above and after 5 mins remove from stove.
  4. Heat oil in a pan, add seasonings, sauté till the onions are fried well, then add this to the Prawn Mango Curry and cover it with a lid.
  5. SERVE HOT WITH RICE OR IDIYAPPAMS
