COCONUT RICE





Ingredients
  1. Basmathi rice- 1 cup/200g, 
  2. Shredded coconut-1cup/100g, 
  3. Coconut milk- 1cup/250ml, 
  4. Water -1 cup/250 ml,
For Seasoning
  1. Onion -1 finely chopped, 
  2. Green chilly -2 finely chopped, 
  3. Ginger -1 inch finely chopped, 
  4. Red chilly -2 broken, 
  5. Mustard seeds-2 tsp/5g, 
  6. Urad dal-2 tsp/ 10g, 
  7. Roasted channa dal – 2 tsp/ 10g (can use Bengal gram), 
  8. Cashew nut- 10 chopped, 
  9. Raisins- 20, 
  10. Asafoetida – a pinch, 
  11. Oil 2 tbsp/10g, 
  12. Salt as needed, 
  13. Turmeric pdr- 2 pinch.


Method
  1. Wash the rice 2-3 times and cook in 1 cup water, 1 cup coconut milk and shredded coconut and salt and keep aside (pls ensure that the rice doesn't get over cooked). 
  2. Heat oil in a pan add mustard seeds let it crackle add red chilly, curry leaves sauté then add urad dal, roasted channa dal cashew, raisins, asafetida and turmeric pdr and  fry well.
  3. Mix the seasoning with the cooked rice mix gently.
