COCONUT RICE
Ingredients
- Basmathi rice- 1 cup/200g,
- Shredded coconut-1cup/100g,
- Coconut milk- 1cup/250ml,
- Water -1 cup/250 ml,
For
Seasoning
- Onion -1 finely chopped,
- Green chilly -2 finely chopped,
- Ginger -1 inch finely chopped,
- Red chilly -2 broken,
- Mustard seeds-2 tsp/5g,
- Urad dal-2 tsp/ 10g,
- Roasted channa dal – 2 tsp/ 10g (can use Bengal gram),
- Cashew nut- 10 chopped,
- Raisins- 20,
- Asafoetida – a pinch,
- Oil 2 tbsp/10g,
- Salt as needed,
- Turmeric pdr- 2 pinch.
Method
- Wash the rice 2-3 times and cook in 1 cup water, 1 cup coconut milk and shredded coconut and salt and keep aside (pls ensure that the rice doesn't get over cooked).
- Heat oil in a pan add mustard seeds let it crackle add red chilly, curry leaves sauté then add urad dal, roasted channa dal cashew, raisins, asafetida and turmeric pdr and fry well.
- Mix the seasoning with the cooked rice mix gently.
